Kale + Pomegranate Salad

Prep Time: 10-15 mins Servings: 4

Ingredients:

- 1 bunch of kale, de-stemmed and chopped

- 1/2 cup pomegranate seeds

- 1 avocado, diced

- 1/3 cup walnuts, toasted and chopped

- 1/4 red onion, thinly sliced (optional)

Dressing:

- 3 tbsp olive oil

- 1 tbsp apple cider vinegar

- 1 tsp Dijon mustard

- 1 tsp honey or maple syrup

- Salt and pepper to taste

Directions:

1. Place chopped kale in a large bowl and drizzle with 1 tablespoon of olive oil and a pinch of salt. Massage the kale with your hands for 1-2 minutes until it softens.

2. Add pomegranate seeds, diced avocado, toasted walnuts, and red onion (if using) to the kale.

3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, and a pinch of salt and pepper.

4. Pour the dressing over the salad and toss to combine.

5. Serve immediately or let it sit for 10-15 minutes for the flavors to meld.
