Roasted Root Vegetables

Prep Time: 10-15 mins Cook Time: 30-40 mins Servings: 4

Ingredients:

- 2 sweet potatoes, peeled and cubed

- 3 carrots, peeled and sliced

- 2 beets, peeled and cubed

- 2 parsnips, peeled and cubed

- 2 tbsp olive oil

- 1 tsp fresh rosemary, chopped

- 1 tsp fresh thyme, chopped

- 1/2 tsp garlic powder

- Salt and pepper to taste

Directions:

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, toss the cubed sweet potatoes, carrots, beets, and parsnips with olive oil, garlic powder, rosemary, thyme, salt, and pepper.

3. Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast for 30-40 minutes, stirring halfway through, until the vegetables are tender and slightly crispy on the edges.

4. Serve warm as a side dish, garnished with extra fresh herbs if desired.
