Sweet Chicken Salad

I don’t like traditional Chicken Salad, so this is my spin adding in additional nutrients and flavor!! This is naturally Gluten-Free (Check your dressings) and it can be made Dairy-Free by swapping the Cream Cheese for Mayonnaise.

This delicious recipe can be:

  • A party Appetizer

  • Paired with a Croissant

  • Made a Low Carb Meal pairing with Cumbers, Bell Peppers, or Lettuce Wraps

Ingredients

1 Rotisserie Chicken or 2 Chicken Breasts

3 oz Softened Cream Cheese or Mayonnaise 

1/2 cup Poppy Seed Dressing

1/4 tsp. Salt

1/4 tsp. Black Pepper

1/4 tsp. Onion Powder

1/2 tsp. Garlic Powder

1/2 tsp. Parsley

5 Celery Stalks, diced

1 Shallot

Green Onions

Half a Large English Cucumber

1/4 cup Dried Cranberries. Can also sub. for 1 cup of quartered Grapes

3 Tbsp. Hemp Seeds (Optional)

Directions

  1. Shred or chop Chicken.

  2. Chop Cucumber, Green Onions, Shallot, Grapes and Celery.

  3. Add 1/4 cup chopped Green Onions, and all other ingredients and spices to a bowl and mix.

  4. Top with extra Green Onions and Enjoy!

Notes:

Rotisserie Chickens and Chicken Breasts vary in size. This should be a creamy recipe so if it is too dry 1.5-2x the recipe until you receive your desired results.
